New Super Successful Un-Chicken Salad Sandwich Recipe

I had tremendous good luck today with making Vegan chicken salad sandwiches.  This is not a product I ever actually tried in my animal ingesting days, rather something I was first introduced to at the AR Conference in Los Angeles earlier this year.  Whether or not you previously enjoyed chicken salad sandwiches, this is a super easy, quick and really delicious one to whip up!

You will need:
block of frozen tofu
chopped celery (between 1-2 stalks)
chopped red onion(between 1/4-1/2 of the onion)
chopped pickles, optional
veganaise, or nayanaise (any Vegan mayonaise)
salt and pepper (to taste)
poultry seasoning (to taste, approx 1/4 tsp)

First off, unless you’re a level 5 hippie like myself and already have a block of frozen tofu in your freezer, you’ll need to begin preparation 24 hours in advance of the actual eating.  Take a standard block of tofu, medium or firm, and slice the packaging to drain all the liquid from it.  Then pop it in the freezer for 24 hours.

Directions:

Take your frozen brick of tofu and pop it into a collander and rinse under super hot water for several minutes until it is totally unthawed in the middle.  Tear tofu into small shredded pieces.  Add crunchy things (ie, celery, onions, pickles) as desired.  Moisten with Mayonnaise to hold mixture together.  Season to taste with salt, pepper, poultry seasoning.   Spread super thick onto large, toasted slices of bread, Rye bread is delicious!

The more Mayo you add, the gooier the sandwich will be,  I went a bit easy on the mayo so that it would all hold together well.  This is a very versatile recipe, I haven’t given specific quantities because even the most novice chef will figure out how much they want to add to get the taste that they like.  Poultry seasoning is seriously delicious and due to its’ unfortunate title, is something  Vegans don’t get to enjoy too often.  It absolutely makes this recipe for me, and stay tuned for mevegan’s Christmas Stuffing recipe, which is heavy on the poultry seasoning!

CNN has been on fire lately.  Last week, on Issues with Jane Valez-Mitchell, she broke the story of an Organic veal farm in Maine that was subjecting new born babies to levels of cruelty unimaginable to a normal person’s mind.  This is the type of farm that many people tell themselves is “better, or at least less cruel” to the animals.  Nonesense, go Vegan!

So today, I stumbled upon another article on CNN.com from an author by the name of Johnathan Foer who writes passionately of the need for a Vegetarian diet.  He is also very critical of mainstream dietary information sources, stating that “We are constantly lied to about nutrition.”  I highly recommend this article, not to support the mainstream media, but hey, when they’re right, they’re right.  Enjoy:

South Park "Whale Whores"

This week the epically funny, always contraversial show South Park took on the issue of the Japanese Whale and Dolphin slaughters.  Obviously both sides got it rather viciously, but then that’s why we love South Park.  Most of all, this is terrific exposure for both the Sea Shepherds as well as the issue of illegal Whale killing.  Check out the episode below:
