Ingredients:
1 cup white or sweet rice flour
1/4 tsp Guar Gum
1/2 cup brown sugar
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
2 tablespoons applesauce
1/4 cup almond milk
1 1/2 cup crunchy style organic peanut butter
Mix two sugars and peanut butter. Add flour. Add other ingredients. Roll into small balls, less than an inch in diameter, and moosh into patties. Bake @ 350 for precisely 10 mins; watch the smiles start
Vegan Chocolate Chip Cookies
Ingredients:
1/2 cup earth balance
3/4 cup light brown sugar
1/4 cup granulated sugar
Equivalent replacer for 1 egg
1 teaspoon vanilla
1 cup sweet rice flour
1/2 tsp Guar Gum
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup semisweet chocolate chips
1/2 cup chopped nuts — (optional)
1/2 cup oatmeal or 1 tablespoon white flour — (optional)
2 tablespoons coconut flour (optional)
Heat the oven to 375°F. Cream together earth balance and sugars, add prepared egg replacer and vanilla. Mix together dry ingredients and slowly stir into wet mixture. If not using nuts, add extra flour or oats now. When well-mixed, stir in chocolate chips and nuts. Using a heaping tablespoon per cookie, drop onto cookie sheet and bake for about 10 minutes (only 8 minutes if using a dark cookie sheet). Remove from oven when light brown. (They will finish baking a little after they are out of the oven.)
EGG REPLACER INFORMATION:
How much Egg Replacer do you need to replace one egg?
One Egg = 1 1/2 tsp Egg Replacer to 2 tbsp of water. To replace egg whites use the same amount as replacing the entire egg, so One Egg White=1 1/2 tsp Egg Replacer to 2 tbsp of water. To replace the egg yolk stir 1-1/2 tsp Egg Replacer into 1 tbsp of water.
